The metabolism of micro-organism is dependent on outer environment. If the environment is unfavorable, many micro-organisms will stop their proliferation and undergo dormancy. The micro-organism in the dormancy does not use oxygen for its metabolism. In addition, it can survive after heating unlike the micro-organism under proliferation.
